I spoke too soon about color!
I took a look at the Phoenix image website and it looked like there were an awful lot of very-similar images, which meant some of them might represent color data. I fiddled a bit, and here's the first quick-and-dirty color image from Phoenix...enjoy! Now I feel better. :)

This image is composed of three taken from the Phoenix website on the first day. It is a combination of an unknown set of filters, what is probably a shorter-wavelength one in the blue channel and what is probably a longer-wavelength one in the red and green channels. This produces a color combination where the rocks are bluer than the soil, which is typical for Mars.Let's Explore More
